Fish Tacos with Chipotle Yogurt

So many flavors. Yum.

My fish tacos are based on this recipe by the fabulous Ellie Krieger. The chipotle sauce is the magic. It fulfills the creaminess, spiciness, and smokiness that one might want in their fish taco. I used to avoid anything requiring chipotle in adobo because it seemed like a waste to buy a whole can just to use some small amount. But then I learned that you can freeze it in a freezer bag and just grate or shave off a bit of it when needed. Now it's a staple in our freezer.

As far as the fish goes, I'm not consistent. It could be tilapia, halibut, cod, or mahi-mahi. It might be baked or it might be cooked in a pan. It may or may not be marinated or squeezed with lime. None of this really matters when you're dousing it in chipotle yogurt. Cook the fish as you wish.

My favorite toppings are fresh lime, cabbage, cilantro, avocado, and red onion. Corn is also great (it's in the original recipe, and tomato is good. Normally I use jalapenos as a taco topping, but they're not needed since you have the chipotle.

If I could do it again, the red would go in the middle, with green/purple opposing corners.

Corn tortillas are great if you can get fresh ones, but I generally go with flour tortillas (either whole wheat or the sundried tomato kind) because they're easier to keep around and serve without grilling each one.


The Recipe:
1/2 c plain yogurt
2 tsp chipotle in adobo
8 6-inch tortillas
1 lb white fish (I used tilapia here)
salt and pepper
2 tb lime juice
2 tb olive oil
Your choice of toppings (lime wedges, shredded cabbage, cilantro, avocado, red onion, corn, tomato, etc)
  • Mix yogurt with chipotle in adobo.
  • Marinate the fish in oil, lime, salt, and pepper for 20 minutes. 
  • Remove fish from marinade and cook in a pan about 3 minutes per side.
  • Squeeze lime wedges onto fish (or top the fish with additional lime juice).
  • Fill each tortilla with fish, chipotle sauce, and toppings.

Samosa Burritos

Imagine a pile of plain yogurt and some Indian pickle for dipping I saw a Pinterest recipe for samosa-filled quesadillas, which led me to  this recipe  from Nadia's Healthy Kitchen for baked samosas using tortillas, which led me to just use the giant tortillas I had in the fridge and make them into full-sized burritos. They were a hit! I largely followed the recipe from Nadia's Healthy Kitchen, but I added some potato, omitted the chana masala powder and just added a bunch of cumin instead, added bell pepper and fresh chilies, didn't bother with the "sealing paste," and basted them in a little bit of melted butter (omit for vegan version). Vietnamese Curry Stir-Fry

  When I get the recipe just right, I'll go to the effort of adding fried shallots on top. I'm back to my on-and-off mission of trying to make a stir-fry as delicious as the shrimp I used to get at  Pho Grand  in St. Louis during college. It was called "cari tom" but it definitely wasn't a coconut milk type of curry, and they ALSO have a separate listing on their menu for "cari tom dac biet" which includes "coconut milk sauce" in their description.
